Hand picked Estate fruit processed with Pellenc sorting and de-stemming system. Fermented in a concrete tank for 15-30 days, then aged in new French Oak barrels for 22 months. Bottled unflitered and unfined using 100% native spontaneous yeast. Will age well for 15+ years.
